Recently, my friend has been very fond of braised chicken with rice. She always asks to eat it at mealtime. A few days ago, I brought her a portion according to the recipe below. After she tasted it, she exclaimed that it was delicious. Today I will introduce to you the recipe of homemade braised chicken rice, it tastes simply amazing.

Main ingredients: Three yellow chicken (you can use a whole chicken if you have more people, or just chicken thighs if you have fewer people)

Ingredients: 6 dried mushrooms, 2 green peppers, 4 red peppers, a piece of ginger

Seasonings needed : rock sugar or white sugar, light soy sauce, salt, cooking wine

The steps for making braised chicken rice at home are as follows:

The first step is to cut the ingredients: wash the chicken, cut it into small pieces for later use, soak the dried mushrooms in warm water in advance and cut them into slices, cut the ginger into thin slices or directly smash it, and cut the green and red peppers into small circles (you can also cut them into other shapes according to your personal preference)

The second step is to fry the sugar color: don't turn on the fire first. Put a little oil in a cold pan, then add rock sugar or white sugar, 2 spoons is enough, not too much, then turn on low heat and fry slowly. Stir constantly at this time, otherwise it will easily stick to the pan. Wait until the sugar is completely melted and the color turns dark brown. Fried sugar color can give the chicken better color, the effect is great.

The third step is to stir-fry the chicken: After the sugar color is fried, you can pour the chicken into the pot, stir-fry quickly over high heat, add two spoons of cooking wine, cover the lid and simmer for a while, then add the pre-cut green and red peppers and mushrooms, appropriate amounts of light soy sauce and salt, stir evenly, then add water, it is best if the water covers the chicken. Cover the pot and after the water boils, turn the high heat to low heat and simmer for about 15 minutes.

Step 4: Cooking: Electric rice cookers are very convenient nowadays. Just measure the rice, wash it clean, add water, and press the button. I won’t say more here. (You can cook the rice while cooking the chicken, so that when the chicken is cooked, the rice will be almost cooked, and the timing is just right)
