1. Put the purchased clams into a basin and soak them in salt water for about two hours to allow the clams to spit out the sand. 2. Prepare the ingredients for stir-fried clams. Cut the green onion into sections, chop the ginger, garlic and coriander, and cut the dried red pepper into two sections. 3. Pour cold water into the pot and bring it to a boil. Then add the clams and boil for about 30 seconds until the clams open slightly. Then rinse them twice with cold water to thoroughly clean the sand. 4. Heat oil in a pan, add two spoons of bean paste and chopped dry red pepper and stir-fry until fragrant. 5. Put the washed clams into the bean paste and stir-fry for a while until the clams are evenly coated with the bean paste, then remove from the heat and set aside. 6. Add a little oil to the pot again, add the chopped onion, ginger and garlic into the pot and stir-fry until fragrant. 7. Put the clams coated with bean paste into the pot again and stir-fry together. Add a spoonful of light soy sauce, two spoonfuls of cooking wine, a spoonful of white sugar, and a little salt for seasoning. Add some water, stir-fry and simmer for a while. 8. After stir-frying for two minutes, add the chopped onions and coriander into the pot. 9. Finally, stir-fry the coriander, green onion and clams evenly and then serve.

2. Eating clams and snails together can cause abdominal bloating.

3. Eating clams and oranges together will affect the absorption of vitamin C.

4. Clams should not be eaten with beer, otherwise it can easily induce gout.

5. Do not eat uncooked shellfish to avoid contracting diseases such as hepatitis.

6. The mud intestines in shellfish should not be eaten.
