Shaanxi Spicy Sauce

Many places have their own special cuisine. Shaanxi not only has mutton soup with steamed buns, roujiamo, pot cakes and other delicacies, but also hemp food. The so-called Ma Shi is a kind of pasta originated in Shaanxi. It is shaped like a finger-sized lump of dough and is often called cat ears. Below I will explain to you the authentic method of cooking Shaanxi stewed hemp food. Friends who want to eat it can try to make it and taste the Shaanxi cuisine.

1. Shanxi Ma Shi

1. Main ingredients: flour, 1 tomato, 1 potato, rapeseed oil, fungus, tofu, carrots, shiitake mushrooms, green onions, a few beans, zucchini, bean sprouts, spinach, vermicelli, salt, vinegar, light soy sauce, pepper powder, thirteen spices, and chili oil.

2. Steps to make Shaanxi Ma Shi

1). Wash all kinds of vegetables.

3). Saute shallots

4.) Add the vegetables in order of how easy they are to cook. For example, if beans and mushrooms take a long time to cook, add them first, and tofu last. Add salt, pepper powder, and thirteen spices and stir well. Turn off the heat after cooking.

5). Knead the dough, cut into cubes, and sprinkle with flour to prevent sticking.

6). Rub the hemp on the dough. Children, the elderly and those with weak stomachs should rub it thinner. People with strong stomachs please ignore this.

7). Add the hemp into the pot after the water boils.

8). After the water is boiled for three times, pour in the fried vegetables. If the vermicelli is cooked, add vinegar, soy sauce, chili oil, and a little sesame oil. You can adjust it according to your own preferences.

2. Shanxi Ma Shi

1. Ingredients: flour, seasonal vegetables, tomatoes, soybeans

2. Process:

1) Knead the dough, which should be slightly soft, and let it rest for 20 minutes;

2) Roll the dough into a 1cm thick pancake, then cut into 1cm wide noodles. Roll the cut noodles into cylinders on the chopping board with your hands.

3) Cut the cylinder into small dices evenly.

4) Sprinkle flour on the chopping board, press the dough lightly with your thumb, and rub it gently with the pressure. The dough will curl up and look like a cat's ear. A chopping board with a slightly rough surface is easier to rub into shape.

5) Cook the cat ears.

6) Cut various vegetables into pistachio-sized pieces and stir-fry until cooked;

7) Chop tomatoes into small pieces, stir-fry in a pan into a sauce, add enough water, and after the water boils, add vegetables and seasonings.

8) Pour the cooked hemp, soybeans and fried side dishes into the soup, stir with a large spoon, pour into a bowl and add a few drops of chili oil.
