2. Bamboo fungus stew with abalone

Ingredients: 10 abalones, some bamboo fungus, some green vegetables, 300g ribs, some chicken essence, some salt, and a bay leaf.

Method: 1. Put the ribs in cold water, blanch and wash them, put them in a stewing pot, add a bay leaf and appropriate amount of water, and stew them until they are soft.

2. Cut off the stem of the bamboo fungus, add a spoonful of salt, and soak it in light salt water for about 15 minutes.

3. Boil water, put the bamboo fungus in and blanch it for a few seconds, then immediately remove it and put it in pure water to cool it for later use.

4. Remove the internal organs of the abalone, repeatedly grab it with a spoonful of salt to remove the fishy smell and surface mucus, and then wash it.

5. Pour the stewed rib soup into the pot, add the abalone and cook for 5 minutes, then add the bamboo fungus, salt and chicken essence and bring to a boil.

6. Finally, add the vegetables and mix well.

3. Abalone, mushroom and chicken soup

Ingredients: 1. Chopped abalone slices 2. Half an old chicken (ask the butcher to remove the skin and oil first), or bamboo shoots (more gelatin) 3. A few mushrooms 4. A little ginger 5. A little salt

Method: 1. Wash the abalone slices (no need to soak) 2. Soak the mushrooms until soft 3. Wash the old chicken and blanch it 4. Bring another pot of water to a boil, then put all the ingredients in.
