How to make Sichuan style rice noodles with assorted sauce

9. Pour rice flour and cold water into the pot at the same time in a ratio of 1:3.

10. Boil for 3-5 minutes, stirring several times in the middle to prevent sticking.

11. Turn off the fire, cover and simmer for 3 minutes, then remove from the heat, rinse under cold water and set aside. If you can finish the meal, you can continue to soak the rice noodles in cold water.

12. Wash and chop the onions into small pieces. Peel and smash the garlic and chop it into small pieces.

13. Take a clean large bowl, put in 1.5 seasoning spoons of salt, Sichuan pepper powder, a little MSG, minced garlic, and clear soup. If you like red soup, you can add 1-2 spoons of red chili oil, depending on your preference.

14.Put cold water in a pot and bring to boil.

15. Add rice noodles and blanch vegetables, then serve in a bowl.

16. Pour the prepared mixed sauce on top, sprinkle with chopped green onions, mix well and serve.
