How to make braised octopus

1. Main material picture.

2. Wash the octopus and cut it into long pieces (leave one intact piece for taking photos).

3. Cut the red and yellow peppers into shreds, cut the chives into sections, and slice the garlic and ginger for later use.

4. Pour clean water into the cooking pot, bring to a boil over high heat, then turn off the heat, put the octopus in, and take it out immediately after the tentacles become curled.

5. Dunk into the cold water and cross the river.

6. Drain the water and set aside (be sure to drain the water, otherwise a lot of water will come out when frying).

7. Prepare seasonings (salt, sugar, chicken essence, pepper) and water starch.

8. Pour oil into the pot, add garlic, ginger slices, bean paste and XO sauce and stir-fry until fragrant.

9. Pour in the chives, octopus, cooking wine, and prepared seasonings.

10. Add red and yellow peppers and stir-fry.

11. Pour in water starch.

12. Stir-fry evenly (9-12 must be done within half a minute, otherwise the octopus will be overcooked and the taste will be bad).
