How to make asparagus with hollandaise sauce

4.2 Put the pot on the fire and pour an appropriate amount of cold water into it

6.2 The egg liquid is beaten evenly and a large number of bubbles appear on the surface. Continue to stir the egg liquid.

7.1 Put 1 spoon of butter in a small bowl

8.2 Continue stirring the egg liquid until it becomes thick enough to hang on chopsticks to form an egg paste

9.1 Melted butter is poured into the beaten egg batter like a ribbon

10.2 Place a small bowl with butter on the water surface and heat until the butter melts.

11. Use chopsticks to stir in one direction to fully mix the egg paste and butter into an emulsified state

12. Add 1/2 teaspoon of salt to the pot for seasoning

13. Sprinkle some white pepper

14. Cut a lemon in half

15. Hold one half of the lemon in your hand and place it over the bowl, squeeze out the lemon juice and drop it into the emulsified egg mixture.

16. Use chopsticks to mix the seasoning and emulsified egg paste evenly. The Hollandaise sauce is ready.

17. To make the sauce smoother and more delicate, filter the sauce with a colander (Hui Xin’s intimate tip 2: The sauce tastes more delicate and smooth after filtering)

18. The sauce filtered into the bowl is more delicate and smooth
