How to make Stollen

1.1 Sponge starter: 113g milk → heat to about 38 degrees → add 64g medium flour and 4t (12g) dry yeast → cover with plastic wrap and ferment at room temperature until a lot of bubbles appear, expand to the maximum, and start to fall

2.2 Dried fruits: 171g raisins, 171g candied dried fruit mixture → chop → add 113g brandy or rum or other fruit wine, 1T orange or lemon essence (I repeat, 25 yuan) → soak for one hour to 2 days

3. Main dough: 284g medium flour, 14g fine sugar, 5g salt, 3g orange peel, 3g lemon peel, 1t cinnamon powder, 47g whole egg liquid, 71g butter, 57g water. 2 medium sponge starter → knead into soft dough (no need to expand) → let stand for 10 minutes → add 1 medium dried fruit and soaking wine → knead evenly → cover with plastic wrap and place in a warm and humid place to ferment (not to double in size) → divide into 4 parts → roll into a ball and relax

4. Shaping and baking: Roll out the relaxed dough to a thickness of about 1.3mm → sprinkle as many almond slices and chopped nuts as possible in the middle → press the dried fruits into the dough and thin the lower middle part → fold the larger upper part downwards → sprinkle as many almond slices and chopped nuts as possible → continue to fold the edges just folded upwards → stuff as many dried fruits and almond paste as possible into the two folded seams, press the seams tightly → shape into a crescent shape (I completely forgot this step...) → ferment until 1.5 times larger → 170 degrees, upper and lower heat, middle and lower layers, about 25 minutes → brush with cooking oil while hot after baking, sift a lot of powdered sugar → seal and freeze after sufficient cooling → thaw at room temperature before eating and cut into thin slices
