How to make original macarons

We often see food shows on TV and make ourselves envious. Here is how to make original macarons. Prepare the ingredients and start making them.

1. Mix the almond powder and sugar in A, grind them into fine powder, and then sieve them.

2. Add the beaten egg whites in step A and mix well.

3. Use another small pot, add ingredients from B and heat over low heat

4. Meanwhile, put the egg whites and sugar in a container without oil or water, and beat until dry foam

5. When the syrup in step 3 is almost ready, heat it to 120 degrees and turn off the heat immediately.

6. Pour the syrup into the egg white paste while it is still hot

7. Beat the syrup and egg white paste immediately and continue to beat until dry foam

8. Take 1/3 of the egg white paste and add it to the almond paste in step 2 and mix well.

9. Pour the mixed paste into the remaining egg white paste and mix well.

10. While stirring the almond protein paste, spread it around the bowl about 15 times to eliminate some bubbles and make it fluid. The final macaron paste should fall down like silk after being scooped up.

11. Put the macaron paste into a squeeze container, or use a piping bag

12. Turn the baking tray over and place the silicone spreading mat on it. Carefully squeeze the batter into the small circle of the silicone mat. Don't fill it up. After a few seconds, it will flow around and fill the small circle.

13. Use a toothpick to gently pierce the small bubbles on top

14. After waiting for about 40 minutes, the surface of the skin has formed a crust. You can touch it with your hand and it feels non-sticky and has a hard crust formed.

15. Preheat the oven to 160 degrees. Because the baking tray is placed upside down, put it in the lower middle layer, and put another baking tray on the lower layer. After about 3 minutes, a skirt will appear, and continue baking for about 3 minutes. Turn on the oven to dissipate heat, move the lower baking tray to the upper layer, leave the baking tray with macarons in place, and bake at 130 degrees for 15 minutes. Take it out and remove it from the silicone mat after it is completely cool.

16. Make the filling: Beat the egg yolk and whole egg in the filling ingredients. Also, soften the butter

17. In another small pot, add water, sugar and maltose, heat to 110 degrees on low heat, turn off the heat, pour into the egg yolk paste in step 16, quickly beat with a whisk, then add softened butter, continue to beat evenly, finally drop in lemon juice and beat evenly.

18. Macarons are ready after filling.
