How to cook grape fish

1. Remove the fish meat from both sides, place it horizontally on the chopping board with the skin facing down, and cut from the meat side. Use a straight knife to carve 1/3 every 1.5 cm, then use a slanted knife to carve pattern cuts. Use a horizontal knife to carve pattern cuts every 1 cm or so.
