Dried razor clams with three peppers

Ingredients: Dried clams, onions, garlic, ginger

practice:

1. Soak the dried clams in clean water for half an hour, rinse them to remove dust and sand, and steam them directly in the steamer for 20 minutes until cooked.

2. Slice the ginger, chop the green onion, and peel the garlic.

3. Put 3 spoons of oil in the pan and heat it to 70% hot. Add the steamed dried clams and stir-fry for 2 minutes. Remove and set aside.

4. After turning to low heat, add peppercorns to the remaining oil in the original pot and stir-fry until fragrant (also to make the peppercorns less numbing), add whole small chili peppers (I dare not cut them because they are too spicy, so if you like spicier taste, just cut the small chili peppers) and chopped green chilies, and also push in the onions, ginger and garlic and stir-fry.

5. After all the ingredients are mixed (2 minutes), add the fried dried clams, light soy sauce, sugar, and cooking wine, stir-fry for a while until the flavors are absorbed and then it is ready to be served.

Dried Razor Clams with Pork

practice:

1. Wash the dried clams and put them in a bowl, add clean water to cover them, steam them in a steamer and take them out;

2. Pick up the dried clams and place them in clean water. Stir with chopsticks to remove the sand and feces.

3. Filter the original juice of steamed razor clams and set aside;

4. Peel the winter bamboo shoots, wash, cook and slice;

5. Select pork belly with skin, scrape and clean it, cut it into 1 cm thick rectangular slices, put it in the pot, add water to the level of the meat, and cook it over high heat;

6. After boiling, skim off the foam, and simmer over low heat until 50% cooked. Then add minced ginger, sugar, rice wine, soy sauce, refined salt, bamboo shoots, dried clams, and original juice.

7. Continue to cook until it is soft, dilute with wet starch to thicken, remove from heat, place on a plate, sprinkle with chopped green onion and serve.
