Add 190g of high-gluten flour to the main dough and start the kneading function of the bread machine.

4. Observe the dough. If the flour cannot be kneaded into a ball, it means the dough is too dry. Then slowly add the remaining soy milk. Do not pour it all at once. Add it slowly until the dough is adjusted to a balance between dryness and wetness.

5. After the first kneading, add corn oil. Continue kneading process.

6. When finished, pull out the dough. If a tough film with irregular holes is formed, it has reached the expansion stage. If it doesn't work, you need to enter the dough kneading process again.

7. After kneading the dough, cover the bread machine and start the fermentation process. Let the dough rise until it doubles in size.

8. Take out and rub gently to release air. Divide into four portions and roll into balls. Cover with plastic wrap and let rise for 20 minutes.

9. Flatten the dough, add melon seeds and nuts, and knead well.

10. Put it back into the baking tray, cover with plastic wrap, and refrigerate to ferment for about 8 hours. Take it out the next day and the bread will have expanded again. Let it return to room temperature for 20 minutes. With 10 minutes left, preheat the oven to 170°.

11. Brush a layer of egg liquid on the surface of the bread, sprinkle a little melon seeds and nuts for decoration, put it into the oven, still at 170°, and bake for 20 minutes.
