Method 1

Ingredients: 1.5 kg lobster, 500 g broth, 50 g butter, 500 g starch, 50 g oil, appropriate amount of salt, and a pinch of pepper.

Purchase of raw materials: Choose flower lobsters, which have flexible eyes and are considered fresh and vigorous.

1. Wash the lobster, cut it into large pieces and coat it with starch for later use.

2. Heat the pan until it starts to smoke, add oil and keep the oil temperature at around 180°C. Put the lobster in and fry until it is 70% cooked, then remove from the pan.

3. In a new pot, add butter and broth to season.

4. Finally, add the lobster, thicken and serve.

Method 2

Ingredients: 6 quick-frozen lobster tails (thin), 4 slices of ginger, 1 scallion, 1 tablespoon of cornstarch.

Ingredients: Marinade: 1/2 teaspoon salt, 1 teaspoon cornstarch, a little sesame oil and pepper. Sauce: 1/3 cup chicken broth, 1/2 teaspoon each of sugar and sesame oil, 1 teaspoon each of light soy sauce and cornstarch water.

1. Defrost and rinse the lobster tails, chop into pieces, mix with marinade and leave for 5 minutes, then sprinkle with a thin layer of cornstarch. 2. Slightly smash the ginger slices and cut the green onions into sections. 3. Heat 4-6 tablespoons of oil, fry the lobster pieces in the oil over medium-high heat until golden brown, then remove. 4. Use the remaining oil to sauté ginger and scallions, return the lobster to the pan, add the wine and sauce and bake for 1 minute. 5. Finally, add cornstarch water to thicken the sauce and enjoy while hot.

Note: Production time: 25 minutes

Servings: 3-4 people

When frying lobster, use medium-high heat. If you use a slow fire, the meat will become mushy.
