Chicken in tomato sauce recipe

1. Ingredients: • Chicken • Broad beans • Thyme • Onions • Canned tomatoes • King oyster mushrooms • Salt • Olive oil • Freshly ground black pepper • Broth

2. Dry the chicken pieces, rub them with salt, and place them in the refrigerator for 2 hours or overnight. After taking out, wipe both sides of the chicken pieces dry (to prevent oil from sticking to the pan), and fry the chicken skin down in the pan until golden brown;

3. When one side is golden brown, turn it over and fry again;

4. Remove the chicken and set aside, leaving the oil in the pot;

5. Fry the onions until soft and slightly caramelized;

6. Pour in tomatoes and stir-fry until fragrant, then crush until soft and tender;

7. Add broad beans and stir-fry together;

8. Return the chicken to the pot, add the king oyster mushroom cubes, then add the broth, black pepper and thyme, season with salt, cover and simmer over low heat after boiling;

9. Stew until the chicken is tender, open the lid and collect the juices before serving. It is best served with bread.
