How to make sponge steamed cake (whipped eggs)

7. Beat until the egg liquid is thick and lines appear.

8. Add 1/3 sugar at this time

9. Continue beating until the texture is obvious and the egg liquid is thick, then add the last 1/3 of sugar.

10. Beat the egg batter thoroughly until the traces of the egg batter do not disappear immediately after the egg beater is lifted. I use two egg beaters to beat the batter at the same time. This process only takes about ten minutes.

11. At this time, sift the mixture of low-gluten flour and baking powder into the egg batter.

12. Use a rubber spatula to quickly stir evenly.

13. Then add a large spoonful of strawberry condensed milk to the egg batter. You can use the spoon you usually use for eating or drinking soup. You can also use other flavors of condensed milk.

14. Add another tablespoon of corn oil

15. Stir again with a rubber spatula.

16. Finally, put in 2/3 of the raisins.

18. Put the mixed cake batter into a high temperature resistant mold. I used four Lock&Lock glass boxes and bowls, which are resistant to high temperatures of 400 degrees. You can also use a large 8-inch round cake mold.

19. Sprinkle some raisins on the surface, but it will sink quickly.

20. Put enough water in the steamer and bring it to a boil. Put in the cake batter and steam for 25-30 minutes. My pot can't hold four, so I steamed the other one separately.

21. Turn off the heat after 5-30 minutes, simmer for one or two minutes, open the lid, it will not rise too high like chiffon cake

22. Take it out and let it cool naturally to room temperature

23. The cake will shrink slightly due to the evaporation of water vapor and automatically separate from the glass wall.

24. Use a blade and your hands to slowly remove the cake from the mold.
