How to make hot dry noodles

Wuhan's hot dry noodles is a nationally famous delicacy. It has two characteristics. First, the noodles are chewy and handmade. Second, the sauce has a special flavor that is not something that ordinary people can make. There are many side dishes for hot dry noodles, such as coriander, crushed peanuts, pickled radish cubes, etc. At the same time, when preparing sesame paste, water must be added to dilute it. This is the special part, because how much water to add to make it taste good depends entirely on experience. Here are some common ways to cook hot dry noodles.

Folding method 1

1. Prepare hot dry noodles;

3. Fried peanut crumbs. Peanut butter or crushed peanuts are ingredients that complement the sesame paste flavor in hot dry noodles. Mix the peanuts with a little vegetable oil, put them in the microwave until fragrant, let them cool, and then crush them with a rolling pin. You can remove the peanut skin or not.

4. Wash and drain the shallots, chop and set aside;

5. Prepare the spicy radish, crushed peanuts and chopped green onion. Next, we will move on to the most critical step: preparing the sesame paste.

6. The sesame paste from the sesame oil workshop is the same as the sesame paste sold in the market. Before mixing with noodles, it needs to be diluted. Prepare a cup of warm water, add warm water little by little to the bowl of sesame paste, and stir in the same direction.

7. When you first start stirring, you will find that it becomes thicker and stickier. When you feel that you can no longer stir, continue to add a little warm water and continue stirring in the same direction;

8. Add water, stir, add water again, stir again, dilute the sesame paste until it drips smoothly like satin when scooped up with a spoon, then add salt and a little bit of sugar and mix thoroughly;

9. Pour a little sesame oil into a bowl and mix it with sesame paste. The sesame paste for the noodles is ready.

10. Prepare the two seasonings. To mix the sauce, mix 2 tablespoons of soy sauce and 1 teaspoon of oyster sauce; prepare homemade red chili oil;

11. After the preparations are in place, you can start cooking the noodles;

12. Pour the hot noodles into a bowl and pour sesame sauce of appropriate thickness on them;

13. Add the prepared mixed sauce and red chili oil, sprinkle with the three treasures (spicy radish, crushed peanuts, and chopped green onions), and adjust the Shanxi aged vinegar according to personal taste to make it more delicious.

Note: Place a large amount of water in the noodle cooking pot, sprinkle some salt into the pot, keep the water boiling over high heat, put the noodles into the pot and sprinkle with water, and take them out 20 seconds after putting the noodles into the pot, for the best heat and taste.

Method 2

1. Add one tablespoon of sesame oil to the fresh noodles and mix well.

2. Steam in a steamer over high heat for 10 minutes. Use chopsticks to shake the steamed dough and let it cool.

3. Chop the pickled mustard tuber, sour beans and shallots.

4. If you like spicy food, you can mix the pickled mustard and sour beans with chili oil or chili sauce.

5. Finally, mix sesame paste, sesame oil, dark soy sauce, light soy sauce, spicy powder and salt. Put the cooled noodles back into the pot and cook for about 1 minute until they are cooked, but don't cook them too soft. After taking out, put it into a bowl, pour the prepared sauce on it, sprinkle with pickled mustard tuber, sour beans and green onions, and mix well while hot.

Method 3

1. Bring water to a boil over high heat, add noodles, stir with chopsticks, cook until done (they should be a little hard in the core), drain, add oil and let cool.

2. Wash the carrots, cut them into small cubes, blanch them in boiling water, and drain them.

3. Pour sesame paste into a bowl, add sesame oil and stir well, then add a little boiling water and continue stirring. When the sesame paste is dry, add a little boiling water and stir. Repeat several times until the sesame paste becomes a thin paste.

4. Add sweet bean paste, chili paste, chicken essence, Fuqing spicy powder and white pepper powder to the diluted sesame paste and mix well to make a sauce.

5. Put the noodles into a bowl, add the sauce, sprinkle with diced carrots and chopped green onions, mix well and serve.

Method 4

1. Add edible alkali to water and dissolve it; hot dry noodles

2. Pour into the bowl filled with flour;

3. Add a little salt and stir well with chopsticks;

4. Knead into a harder dough;

5. Divide the dough into small portions so that it is convenient for the dough pressing machine to press;

6. Press back and forth several times to form a smooth dough;

7. Then use the round hole to press into thin round noodles;

8. Make all the small doughs in this way;

9. Bring a large pot of water to a boil, pour in the pressed noodles and cook until 70% done. (If you are eating it right after cooking, cook it until it is fully cooked);

10. Then drain the water, pick it up, put it in a windy place to cool, or rinse it with cold water directly;

11. After it has cooled down a little, pour in sesame oil and mix well to prevent sticking. This way the dough is ready. Once cooled, you can put it in the refrigerator;

12. Put it in the pot and cook until it is done. The noodles are already half cooked and only need to be slightly blanched;

13. Take out the noodles, put them in a bowl, add Fuqing spicy powder, MSG, soy sauce and vinegar;

14. Add diced radish and most importantly sesame sauce;

15. Sprinkle with chopped green onions and serve. [6] [8]

Ingredients: Hot dry noodles

Accessories: Onion

Seasoning: chili oil, sesame paste, dark soy sauce, salt, thirteen spices Wuhan hot dry noodles

Method 5

1. Prepare the necessary ingredients; put sesame paste in a container, boil the water in the pot, add the hot dry noodles, and cook until there is no hard core; stir with cold boiled water into a thin paste.

2. Put the cooked hot dry noodles on a plate; add dark soy sauce; add sesame paste; add salt.

3. Add thirteen spices; add sesame oil; sprinkle with chopped green onions , add homemade chili oil and mix well. [1]

Ingredients: 150g alkaline noodles

Ingredients: 15ml hot oil, 40g sesame paste, 20ml sesame oil, 5ml soy sauce, 5g sugar, 10g minced garlic, 2g salt, a little pepper, 2ml vinegar, 10g cooked peanuts, 10g dried radish, 5g chives

practice:

1. Stir sesame paste with sesame oil little by little to make a slightly thick sauce, then add light soy sauce and salt and stir evenly to make sesame sauce. In addition, add minced garlic, pepper, vinegar and sugar to make the sauce.

2. Crush the peanuts and chop the spicy dried radish and green onions into small pieces.

3. Add water to the pot, bring to a boil, put in the noodles, and boil for about 3 minutes until the noodles are 80% cooked but still hard. Drain the water, pour a spoonful of sesame oil on them, and then blow dry with a hair dryer.

4. Pour sesame sauce and garlic sauce on it, sprinkle with peanuts, spicy dried radish and chopped green onions, mix well and serve.
