How to make braised pork trotters with fermented bean curd

1. Wash the pig's trotters, remove the hair, and chop them into pieces. This step can be done by the butcher;

2. Prepare the ingredients;

3. Put the pig's trotters into the pot and boil them to remove the blood;

4. While blanching the pig's trotters, wash the shallots, cut the white part into sections, cut the other half into chopped green onions, and cut the ginger into shreds;

5. Take 4 pieces of fermented bean curd and a spoonful of fermented bean curd juice;

6. Mash the fermented bean curd into a paste and set aside;

7. Take out the pig's trotters and set aside;

8. Heat a proper amount of oil in a pot, add the pig's trotters and fry over low heat until the water is dry;

9. Then add the scallions and fry until fragrant;

10. Pour in cooking wine, light soy sauce, dark soy sauce and fermented bean curd juice;
