Methods/Steps

After you buy the mustard heads, wash them, peel off the old skin and dirty parts, pay special attention to the bottom of each protrusion, which may be dirty, and use a knife to peel it off. Then cut each mustard head into 2-4 pieces, spread them on a spacious container, place them in a ventilated place, and dry them;

Put the seasonings listed in the raw materials into a clean and dried kimchi jar, add water or boiled water, and add water until it is about half the jar;

Take out a small portion of the previously pickled peppers, pickled ginger and water in the jar and put it into the new jar. This will make the water in the new jar taste better. If you don't have any, it's best to put some fresh chilies in, the taste will be much different. If the jar for making pickled peppers is big enough, you don’t need to make another jar. You can put the pickled vegetables directly into the jar for making pickled peppers, which will taste better.

Stir everything in the jar evenly, especially the salt, so that it is dissolved, otherwise it will sink to the bottom easily;

Put the dried mustard heads into the jar, and put a small plate of appropriate size on the mouth of the jar to prevent water from entering the jar and keep the water clean. Then cover the lid and add clean water to the edge of the jar.

6 After one day, take it out, slice it or make small pieces, add some chicken essence and chili oil and mix it and you can eat it
