How to make egg pie

People cannot live without food, clothing, housing and transportation every day, which are the most basic things, especially "food", which is related to human life and death. To do well in the "food" aspect, you'd better learn to cook each dish by yourself. So, let me introduce to you how to make the dish of stuffed egg pie.

1. Put 500 grams of flour in a bowl, add boiling water and stir until it becomes snowflake-shaped (forgot to take a picture). Take another 500 grams of flour and cold water to knead the dough. Wait for the hot dough to cool down, knead the two doughs together, cover with a wet cloth and set aside.

2.12 Add more green onion, ginger and meat together to chop into stuffing. (The meat you chop yourself tastes better, choose meat that is 30% fat and 70% lean). After chopping, add salt, soy sauce, a small amount of pepper powder, chicken essence and sesame oil, about 80 grams.

3.21 Add water and stir in one direction until it is evenly mixed (generally, add 4 liang of water to one pound of meat filling), stir until there is no water left and stir a few more times.

4.1 Fold the three sides towards the middle, fold the long end a little more, and roll it along the long end towards the other open end.

5.2 Take a piece of dough weighing about 2 taels, press it into a pancake and spread the meat filling on it.

6. Roll it up like this, put some water on the edges to help them stick together and not open, then press it lightly with a rolling pin, being very gentle not to break it. If it breaks, don't add eggs when making it.

7. Heat oil in a frying pan (the amount of oil should be enough to cover most of the dough, and a thicker bottom of the pan is best). While frying, beat the eggs into a small bowl or teacup and beat with some salt.

8. Fry until both sides turn golden brown and bubbles appear in the middle. Use a wooden spatula to move the dish to the edge of the pan and stand it up at an angle. Use a knife to make a small cut.

9. Pour the beaten eggs into the pie with chopsticks and continue frying. The eggs will be cooked in about four to five minutes (or use chopsticks to poke a small hole to check whether the egg is cooked). You can also put half an egg in a pie.
