Preparation: After cleaning the sea bass, cut into slices on both sides, add cooking wine and salt and marinate for 20 minutes, then apply a layer of dry starch on the surface. Pour oil into a hot pan. When the oil is fully hot, put the sea bass in and fry both sides until golden brown. Then remove from the pan. You can add more oil, try to cover the sea bass, so that the fried sea bass will be more golden and crispy. After frying, drain the oil and place on a plate for later use.

Then prepare the sweet and sour sauce. Leave some oil in the pot, pour in tomato sauce and stir-fry quickly, add a bowl of water and bring to a boil, add balsamic vinegar, sugar and a little salt and mix well, pour in water starch, stir while cooking until thick, the sweet and sour sauce is ready, then pour the sweet and sour sauce on the fried sea bass, garnish with shredded green onion, coriander, or lemon, and a sweet and sour sea bass is freshly served.

Nutritious and delicious steamed sea bass

Method: Wash and drain the sea bass, then apply appropriate amount of cooking wine, salt and white pepper evenly all over the body and marinate for 10 minutes. At this time, you can cut the onion, ginger into shreds, and the red and yellow peppers into strips. Then fill the fish belly slightly with shredded green onion and ginger. Place the scallion segments under the fish and the shredded ginger on top of the fish. Then you can put it in the steamer and steam it for about 10 minutes.

You can make the sauce when steaming fish. Put appropriate amounts of steamed fish soy sauce, light soy sauce, sugar, white pepper, warm water, salt, and chicken essence into a small bowl and mix well until all the sugar is dissolved. Take out the steamed sea bass. Remove the original shredded ginger, place fresh shredded green onion, ginger and bell pepper strips, then pour hot oil from head to tail, and finally drizzle with the prepared sauce, and the steamed sea bass is ready. Be careful not to let condensation drip onto the plate. If any condensation drips onto the plate, be sure to pour it out before adding the sauce.
