Materials

5 jin of half a pig's head, 3 sections of green onion, 3 large slices of ginger, 2 star anise, 2 dried chilies, about 15 crystal sugars, about 15 peppercorns, 1 section of cinnamon, 3 hawthorns, 2 tablespoons each of dark soy sauce and seafood soy sauce, 5 tablespoons of bean paste

Basic approach

1. Put the pig head in cold water, add 1 tablespoon of cooking wine and boil it. Boil for 3-5 minutes. Take it out and remove the exposed pig hair with tongs. (Fortunately, the pig head I bought was cleaned up fairly well, with only some pig hair at the base of the ears) Use a knife to remove the bones little by little along the teeth. You don't have to remove the bones. I saw that the pig teeth were black and uncomfortable, so I pulled out the teeth. Remove the bones along with the hair.

2. Put the pork head into the pressure cooker and add all the seasonings.

3. Add clean water. The water level should be level with the meat. My pot is 5 liters, and it's very difficult to stuff all this meat into it. In the end, a part of it was still exposed.

4. Press for 20 minutes.

5. After taking it out of the pan, wrap the meat with tin foil while it is still hot.

6. Take it out and slice it when eating. Isn't it a level higher if you make the pig's head into various shapes like elbows? The taste is no worse than pork elbow.

Tips:

Soak the pig's head in cold water for three to five hours to remove the blood. Change the water midway. After the blood is removed, the pig head is blanched frequently before being made into sauce.

How to cook Suqian pork head

【raw material】

One pig head (about 2500 grams). 30 grams of fine salt, 7.5 grams of fennel, 7.5 grams of cinnamon, 40 grams of soy sauce, and 50 grams of sweet noodle sauce.

【Preparation method】

Soak the pig's head in water and wash it, remove the fine hair with tweezers, cut off the ears, remove the pig's eye sockets, lips, ear rings, nose, split the face into two pieces, split the chin into three pieces, and soak them in water again to rinse off the blood. Boil in water for half an hour, remove from water, clean and cut into pieces. Put oil in a pot and fry the sweet bean paste until it turns sweet. Add the marinade, meat, fennel, cinnamon, soy sauce, salt and water. Bring to a boil over high heat, then simmer for about 3 hours until the meat is tender.
