Leftover rice cakes (oil-free version)

I also made rice cakes with leftover rice using the microwave. It's very simple. Just crush the leftover rice, use a rolling pin to roll it into long strips about 5 mm thick, put them in the refrigerator for half an hour (freezing is for shaping, and also to prevent the knife from sticking when cutting), take them out and cut them into desired lengths (if you're afraid of sticking, just put a little water on the knife when cutting), place them one by one in a microwave-safe bowl, and make sure there are some spaces, otherwise they will stick together. Put them in the microwave for 1 minute, then take them out and turn them over one by one, and put them in the microwave again for 1 minute. The leftover rice cakes are ready. They are oil-free and super healthy. I made the original flavor (the picture is borrowed from someone else), you can add your own seasonings to taste according to your personal preferences.

Leftover rice crust

This is a simple and quick recipe. Beat an egg into the leftover rice, stir well, and add some seasoning. Pour a proper amount of oil into the pot. After the oil is heated, put the mixed leftover rice into the pot and fry it on low heat. When the bottom is golden brown, turn it over and fry it for a while. After it is colored, the fragrant leftover rice crust is ready.

Leftover rice baked rice

I like to eat tomato and eggs, of course, you can add other ingredients according to your personal preference.

Put the leftover rice into a microwave-safe bowl, sprinkle a layer of mozzarella on it, then put the scrambled tomato and egg on it, sprinkle another layer of mozzarella, and if you like ham or bacon, put another layer on top. Finally, put it in the microwave on high heat for 3 minutes. After it comes out of the oven, squeeze a little tomato sauce on it, and the leftover rice and cheese baked rice is ready. It’s so delicious.

Leftover rice meatballs

Put the leftover rice into a safety bag and crush it with your hands. It would be best if you have a blender at home, it only takes seconds. Prepare the minced meat, add light soy sauce, chopped green onion and salt to the minced meat and mix well. Then put the kneaded leftover rice into the minced meat and stir in one direction (to make the leftover rice balls elastic). When the stirring is almost done, add appropriate amount of flour and mix well. There should be more oil in the pot, then use the tiger's mouth to squeeze out the leftover rice balls, put them into the pot one by one, the balls will float from the bottom of the pot, and fry them for a while before they can be served.

Leftover rice clay pot rice

The reason I mentioned this leftover rice clay pot rice is because the clay pot rice sold outside is super expensive now, and most importantly, it’s not hygienic. I have eaten it several times, and I’ve concluded that the main problem is the rice sauce. Rice sauce is sold everywhere, so it’s better to make it yourself. Put the leftover rice into a small casserole (if you don’t have a casserole, a non-stick pan will do), spread the prepared dishes on it, add a little water along the edge of the pot, simmer over low heat until there is rice crust and the rice is very hot. After taking it out of the pot, add the bibimbap sauce and mix well before eating.
