1.1 Put a little more oil in the pan than usual for cooking. When the oil temperature reaches 50%, put the fish in and start frying.

2.2 Prepare the ingredients. Marinate the purchased croaker with salt first. It is best to put it in the sun to dry for a while so that the oil will not splash everywhere when frying, and the fried fish will be intact and in shape. The fish is too long, so it needs to be cut in half horizontally. Cut the ginger into shreds and chop the green onions into chopped green onions. spare

3.1 Add shredded ginger to the pot to remove the fishy smell.

4.2 Start with high heat, then turn to medium heat, rotate the pan to allow the oil to penetrate the fish body and heat the fish evenly. When frying, you can also use a spatula to press the fish body to dry out the moisture in the fish body. This way, the fried fish will be crispy on the outside and tender on the inside. Use a spatula to test it. When the fish body becomes hard and the skin is set, turn it over and fry it. (This requires experience and slow learning.) When both sides of the fish are fried until golden brown, you can start seasoning.

5. Add a little light soy sauce and a little soy sauce to the pot and start cooking the fish.

6. Add more water to the pot and cook the fish. The collision force between the water and the oil in the pot will instantly blend the flavor of the seasoning into the fish. Cover and cook for a few minutes

7. Finally, add a little pepper and MSG to taste, sprinkle with chopped green onions, and serve on a plate.
