1. Peel the fresh eggplant and wash it with clean water.

2. Use a knife to cut the eggplant into small pieces and soak them in salt water for half an hour (to remove the odor of the eggplant)

3. Prepare a bowl of sauce with an appropriate amount of boiled water (broth is better), a spoonful of sesame paste, a little salt, a little balsamic vinegar, a little honey, and some dark soy sauce. Wash and chop the lettuce leaves and garlic and set aside.

4. Wash the soaked eggplants again with clean water to remove excess salt on the surface. Place a wok on high heat, pour corn oil into it and sauté the garlic (you can add more oil), then add the freshly washed eggplant and stir-fry.

5. When the eggplants in the pan are fried until they are soft and small, about 80% cooked, pour in the prepared sauce, stir-fry quickly for a few times, then turn down the heat and simmer for two or three minutes.

6. When the water in the pot is almost dry, add the chopped lettuce leaves (mainly for the appearance, you can also use chopped green onions or other green vegetables instead. I used honey for the sauce, so I didn’t use green onions), stir-fry quickly for a few times and remove from the pan.
