Steak is the favorite food of Westerners, and their three meals a day revolve around steak and bread. In fact, since ancient times, steak has been a relatively traditional food in our country, and steak is usually cooked directly by stewing it. Nowadays, most steaks are fried, and the taste is not much different from authentic Western steaks. So, how to stew steak deliciously and tenderly? Choose a fresh steak, watch it being chopped before paying, rinse the broken bones, clean the dirt off the steak, blanch it and set aside. Use more green onions, garlic and ginger, add other seasonings in appropriate amounts, and use less tangerine peel and licorice. Those who like spicy food can add more dried chili peppers and peppercorns. Put the steak into the pressure cooker, place the seasoning on the steak, and add about 1/2 the amount of steak into the pot with boiling water. Add in turn half a spoonful of vinegar (put in water), two spoonfuls of cooking wine, about a tablespoon of dark soy sauce, a tablespoon of light soy sauce, a spoonful of sugar, and a spoonful of salt (the amount of salt depends on your personal preference). After adding all the seasonings, pour in a can of beer and boil the water in the pot over high heat to allow the seasonings to dissolve in the water and soak in the seasonings. If you have old soup (brine), you can also put it in, which will make the steak more fragrant. After adding the valve to the pressure cooker, cook on high heat for 18 minutes and on low heat for 10 minutes. After it cools naturally, open the valve and boil. Use a spatula and chopsticks to carefully remove the steak to avoid separating the meat and bones. When the braising soup has cooled, put it in a clean container. The old braising soup will be used next time you braise the meat. Beginners can use a thermometer (not recommended as it will waste the juice of the steak and make the steak dry), and rely on feel when they become proficient. To determine how well done your steak is, don’t just look at the time in the recipe; also look at the feel of it.
