How to steam leeks

1. Put about 1000ml of water in a basin, add 1 teaspoon of alkaline flour, and stir evenly (the ratio of water to alkaline flour is 100:1)

2. Soak the leeks in alkaline water for 10 minutes. Soaking leeks in alkaline water can not only remove pesticide residues on the surface of leeks, but also protect the vitamin C in the leeks and prevent them from turning black and smelly.

3. After soaking, take out and drain the water. Sprinkle a little salt to remove some of the spicy taste of the chives

4. Turn the leeks slightly with your hands to make sure the salt is in full contact with the leeks. Marinate for 2 minutes and discard the marinated water.

5. Then season the chives, because chives are delicious, sprinkle a little salt and chicken essence

6. Mix the chives and spread them out to make them fully flavored.

7. Cut the pickled leeks into sections. Do not cut them before washing or while pickling to prevent nutrient loss.

8. Arrange the leek segments evenly on a plate and sprinkle with a little corn starch, which can absorb some of the water vapor generated during the steaming process. Mix them evenly with your hands. This way, the steamed leeks will have a good color and taste. Otherwise, the steam will all fall on the leeks during the steaming process, and the steamed leeks will be soft and the color will not be good.

9. After the pot is boiled, add the chives and steam over high heat for 3 to 5 minutes

10. After steaming, pour appropriate amount of dark soy sauce and sesame oil on it, sprinkle with crushed peanuts, mix well and serve
