How to cook shrimp and celery

1.Pick and clean the celery, and cut it into pieces about 2.5cm long.

2. Before picking and washing the celery, take an appropriate amount of dried shrimps and soak them in warm water for later use.

3. Put the cut celery into the pot and blanch it. (Control of heat: After the water in the pot boils, put the chopped celery in. Wait for the water to boil again for about 1 minute before turning off the heat. The general principle is that the celery should be just cooked through. Do not blanch it too much, as that will seriously affect the taste.) After blanching, put it in cold water to cool.

4. Take out the blanched and cooled celery and drain the water (the water must be drained cleanly. If you can't, you can squeeze the water slightly with your hands, but don't squeeze too hard, otherwise it will affect the appearance).

5. Put the dried celery into a container and add the soaked dried shrimps (if the dried shrimps are large, cut them into smaller pieces). Add appropriate amount of salt, MSG and sesame oil (you can add more sesame oil than when mixing other cold dishes). Just mix well. The taste and flavor will be better if it can be put in the refrigerator to chill for a while.
