1. Make a cross on the raised surface of the pig liver, then soak it in clean water for about 2 hours, changing the water several times during this period, so that the blood in the liver will bubble out.

2. Put the liver into a pot of cold water, skim off the foam after boiling for 2 minutes, then use chopsticks to pick up the liver and rinse it in the pot to remove the blood foam still attached to it, then take it out.

3. Put clean water in a clean pot, add scallion, ginger, star anise, cardamom (cracked with a knife), soy sauce, and rock sugar, bring to a boil, then simmer on low heat for 10 minutes.

4. Add the pork liver and a small spoonful of cooking wine. Cook over low heat for 20 to 30 minutes depending on the size and thickness of the liver. When the liver is almost done, fry it with chopsticks until no blood comes out. Do not overcook it, or honeycombs will appear. Turn off the heat and open the lid.

5. Take it out after it cools down naturally, and the braised pork liver is ready. I usually don’t add salt to the braised pork liver because I always dip it in the sauce when I eat it.

6. Cut the marinated pork liver into thin slices

7. Pick the spinach, wash it and put it into a pot of boiling water (put a few drops of oil in the pot to make the spinach green). Blanch it and take it out immediately when it changes color. Don't wait until the pot boils.

8. Rinse the spinach in cold water and cut into sections

9. Mash the garlic into garlic paste (garlic paste is the best, minced garlic will not have the garlic taste), add soy sauce, chili oil, sesame oil, minced ginger, sesame seeds, and a little salt and mix well to make the seasoning sauce

10. Put the sliced ​​pork liver, spinach and peanuts into the mixing bowl, pour in the prepared sauce and mix well.
