1. Bring water to a boil in a pot, put in the peeled bamboo shoots and cook for two or three minutes (this step is to remove the smell of the bamboo shoots). Remove from the water, drain and cut into small cubes for later use.

2. Heat the pan, add salad oil, cut the marinated tofu into four small pieces, and fry them in the pan until golden brown.

3. Place the fried tofu on a plate and use a knife and spoon to dig a hole in the tofu. Be gentle and be careful not to dig through the tofu.

4. Peel the live shrimps and remove the shrimp intestines. Marinate them with a little salt, cooking wine and cornstarch for a while. Then put it into the oil pan and stir-fry until the surface turns red, remove and set aside.

5. Use the remaining oil from stir-frying the shrimps to stir-fry the green beans and corn kernels for about two minutes, then add the diced spring bamboo shoots and stir-fry evenly.

6. Add the processed shrimps, add a spoonful of seafood sauce, stir-fry evenly and serve.

7. Fill the tofu box with the fried fillings and steam it over high heat for about 10 minutes.

8. After steaming, there will be some soup in the plate. Pour the soup into a clean pot, add a little seafood sauce, mix a thinner water starch, thicken it with glass starch, and pour it on the tofu box.
