(3) The tips of the wings should be clipped off, as it is said that this is where hormones accumulate. (4) Remove the skin and lymph nodes from the chicken’s neck. In addition, you can choose the chicken head or not according to your own situation. If you don’t like it too oily, you can remove some subcutaneous fat.

4. The finished chicken should look like the one in the upper left corner of the picture below. Open the chest and make sure to squeeze out all the blood. The neck should also be cleaned up.

5. The cleaned chicken processed according to the above steps does not need to be blanched, but can be directly put into the casserole, add a piece of ginger and appropriate amount of water, bring to a boil over high heat, adjust to medium heat to remove the foam on the surface, add two spoons of cooking wine and the bamboo fungus in step 1, and after the water boils again, adjust to low heat and simmer for 1.5 to 2 hours, add a small amount of salt and turn off the heat
