  1. Stir-fried eel: remove the eel's internal organs, cut it in half, and then cut it into diamond-shaped sections. Prepare ginger, garlic, garlic sprouts, green and red peppers, and onions. Heat the oil in a pan until it is 50% hot, then add some ginger and garlic and stir-fry. Add the eel pieces and stir-fry until they change color. Serve aside. Reheat the oil in a pan and sauté ginger and garlic. Add onion, green and red pepper and sauté until fragrant. Add the eel segments and stir-fry evenly. Add appropriate amount of salt, light soy sauce, cooking wine, MSG and stir well.

  2. Yellow eel porridge: Wash the eel, boil it in water, pick it up immediately, put it in cold water to wash off the outer layer of slippery liquid, cut it into small strips, mince the ginger, marinate the eel with cooking wine, salt, pepper and salt for a while, wash the rice, add enough water and press the porridge button, check if the rice has bloomed after 1.5 hours, add the eel and stir it after the rice has bloomed, continue to cook until the rice cooker automatically jumps to the yellow light and is done. It took me about 2.5 hours, it depends on the function of your own rice cooker, sprinkle salt, chicken essence and coriander

  3. Braised yellow eel; kill the yellow eel and clean it, wash the green and red peppers, peel and wash the ginger, wash the onions, peel and wash the garlic, and wash the chili peppers. Heat water in a pot, put the yellow eel in and boil it, pour out the eel, rinse with cold water to remove the outer skin, cut into sections, cut the green and red peppers into pieces, tie the onions into knots, slice the ginger, and chop the chili peppers. Heat the oil in a pot, add the ginger slices and chili peppers and stir-fry until fragrant, then pour in the yellow eel and stir-fry evenly, add cooking wine and balsamic vinegar and stir-fry evenly, add garlic and onions and stir-fry evenly, add rock sugar, salt, and dark soy sauce, and bring to a boil over high heat. After the water boils, continue to cook over high heat. When there is not much soup, add the green and red peppers, stir well and start to reduce the soup. When the soup is reduced, it can be served.
