Recipes for home cooking in northern Shaanxi

Home-cooked meals are the most common dishes cooked by families in daily life. Home-cooked meals are generally simple to prepare and easy to operate. The cuisine of each place has its own local characteristics. The most famous dish in northern Shaanxi can be said to be the big stew, which is made by putting many kinds of ingredients together. In addition, there are many home-cooked dishes in northern Shaanxi. Let’s take a look at how to make northern Shaanxi home-cooked dishes.

Northern Shaanxi stew:

Ingredients: proper amount of pork belly, a little old tofu, a small cabbage, two potatoes, a little sweet potato vermicelli, a little soy sauce, two big spices, a little onion, ginger and garlic

Steps for making northern Shaanxi stew:

1. Prepare the ingredients, cut potatoes and firm tofu (firm tofu is better for better flavor) into pieces.

2. Cabbage can also be baby cabbage. I used cabbage, just tear it into pieces.

3. Slice the pork belly

4. Chop onion, ginger and garlic

5. Heat oil in a cold pan and stir-fry the meat. Add a little soy sauce for color. If you have bean paste, you can add some to make it more flavorful.

6. When it is almost cooked, add onion, ginger and garlic and fry until cooked.

7. Then add the cabbage

9. When the cabbage is fried soft, add water to cover the ingredients, add soy sauce, salt, aniseed, and pepper, and simmer for about 15 minutes.

10. Then add the tofu and stew for five minutes before adding the sweet potato vermicelli

11. When it is almost cooked, add a little chicken essence for seasoning and serve.

12. Please note that the sweet potato vermicelli must be soaked in advance.

Shaanxi fried noodles:

1. Add chopped green onion, minced garlic, soybean paste, salt, cooking wine, ginger powder, five-spice powder and dark soy sauce to the minced meat.

2. Put 30 grams of oil in the pot, heat it up, pour in the minced meat and stir-fry until it changes color.

3. Add boiling water and simmer for five minutes.

4. Observe the color of the soup and add some dark soy sauce to color it.

5. Finally, use water starch to thicken the sauce and serve!

6. Knead the dough yourself and use a noodle press to make noodles. The noodles must be hard!

7. Use the dough pressing machine to press the dough into sheets first, repeat many times to make rectangular dough sheets.

8. Pressing strips: If the dough pressing machine does not do this step well, the pressing strips will not feel sharp enough and the edges will not be smooth.

9. Blanched soybean sprouts.

10. Add chopped green onion, coriander and garlic sprouts, mix with noodles and set aside.

11. Add all the ingredients into a bowl of noodles.

12. Mix well and start eating!
