How to cook shrimp rice

Shrimp Rice

1 Remove the head and shell of sword prawns. Chop green onions into sections, separating the white and green parts. Marinate sword prawns and golden hook shrimps with white wine and white pepper powder and set aside.

2 Heat oil in a pan and sauté shrimp heads and shells.

3 Add 1.8 cups of water and simmer for about five minutes to make shrimp soup. Let cool and set aside.

4 Heat up a pan with oil and sauté the scallion whites. Add the shrimps and stir-fry. Then add the scallion greens and soy sauce. Stir-fry until the shrimps are cooked and remove from the pan.

5 Add shrimp soup and white rice to the casserole, simmer for ten minutes, then turn off the heat and continue simmering for another ten minutes.

6Place the shrimps on the rice and enjoy!

1Wash and peel the white shrimps (keep the shrimp heads and shells for making shrimp soup), open the shrimp backs and remove the mud intestines for later use. Chop the garlic, cut the green onion into sections, and separate the white and green onion for later use. Heat oil in a pan, add 1 teaspoon of minced garlic and fry until fragrant. Pour in shrimp heads and shells and fry until they change color. Pour in the broth and bring to a boil before turning off the heat.

2 Filter the shrimp soup from step 1 and set aside. This bowl of red shrimp soup is the source of its sweetness.

3 Heat up a pan with oil, add the scallion and stir-fry until fragrant, add the shrimp and stir-fry over high heat until it changes color, add the shrimp broth, bonito seasoning powder, white pepper powder, minced garlic, and scallion greens and continue cooking until boiling. Remember to taste it, because you will have to add rice later, so the soup should be more salty. If it is not salty enough, add some salt.

4 Remove the shrimps and set aside. Leave the shrimp soup in the pot, pour in the white rice, turn to medium heat and stir-fry quickly until the rice absorbs the soup.

5. Take a bowl of rice and add the shrimp.
