If you want the color of the dish to look good, the method is actually very simple - just add vinegar, because anthocyanins are relatively stable under acidic conditions. Whether adding fruit vinegar or rice vinegar, the color of purple cabbage can be turned into a beautiful purple-red, even redder than its original color.
