1. Shell the shrimp, chop the green onions, beat the eggs in a bowl, add warm water and stir evenly, and add salt to taste

2. Sieve the mixed liquid twice, or remove the small bubbles on the surface

3. Then cut the shrimp into small pieces, put half of it in the bottom of a bowl, pour the egg liquid you just filtered into the bowl about 90% full, cover it with a layer of plastic wrap, put it in a steamer, heat it over high heat, and when the water in the steamer boils, turn to low heat

4. Steam for about 7-8 minutes, when the egg liquid is condensed to a certain extent, place the remaining shrimp on the surface of the egg custard, cover with a lid and steam for 2-3 minutes before turning off the heat. After turning off the heat, simmer for a few minutes before taking out and letting it cool. Finally, drizzle sesame oil on the surface of the egg custard and sprinkle with chopped green onions according to your taste.
