1.12 First of all, the most important thing is water! If you want the noodles to be chewy, firm and soft, you must use freshly boiled water to knead the noodles. Freshly boiled water must be used directly after it is turned on the fire; it cannot be used from a thermos. Secondly, the ratio of water to noodles is 1:1. It is difficult for beginners to grasp the ratio. A simple way is to put the noodles in a basin and use a spatula to shape the noodles into a semicircle. Then pour the same amount of boiling water on the other half, and the ratio will be just right.

2.21 Pour in boiling water and stir with chopsticks until the noodles become lumpy and no dry noodles are left. Pour the noodles onto a chopping board.

3. Let it cool slightly as long as you can bear the temperature, and turn it into a shiny dough. (Don't make it too hot, be careful not to burn your hands)

4.Pinch out a small piece of dough and knead it into a small dough.

5. Roll the dough into a pancake. You can choose the thickness according to your preference. I am not good at it, so I roll it a little thick: (Brush a little oil on one side of the rolled pancake or directly on the steamer to prevent it from sticking. Be sure to boil the water and steam it on high heat for 10 minutes.

6. Shake the steamed pancake gently with your hands to make it more elastic.

7. Let the pancake cool slightly, then cut into shreds (the ones I cut seemed to be called strips or sticks! They don’t look very good, but the taste is very good, very chewy and soft. If you cut them long, you can swing them up for fun). That’s it. It can be paired with a variety of hot or cold soups. My cold soup is very simple, with salt water, light soy sauce, vinegar, fresh vegetables, sautéed green onions, minced garlic, cucumber, purple cabbage (the soup needs to be killed beforehand), and other vegetables. Hot soup: lamb and potatoes, eggs and tomatoes, etc. This noodle can also be made directly into fried oat noodles.
