1. To prepare chili in oil: steam the chili powder for 5 minutes, then mix with appropriate amount of sesame oil.

2.121 Pour a proper amount of rapeseed oil into the pot and heat it over medium heat. Use bamboo chopsticks to test if small bubbles appear. The oil temperature is now 60% to 70% hot.

19. Put the soaked peppercorns into the microwave and cook them until cooked.

20. Take out the cooked Sichuan peppercorns and let them cool, then use a food processor to blend them into a fine paste. If you don’t have a food processor, you can also chop them with a knife (Note: It is better to choose seedless Sichuan peppercorns. If you have Sichuan peppercorns, pick them out cleanly before using, as they taste better).

21. Pour the whipped pepper and sesame sauce into a bowl.

22. Put it in the microwave again for 5 seconds. This is more hygienic. After the pepper and sesame sauce is made, let it cool down. When it is completely cool, put it in a glass bottle, add appropriate amount of scallion oil or pepper oil, seal it and store it for later use.

23. Make sesame sauce and crushed peanuts; add a few drops of dark soy sauce into the sesame paste.

24. Then sprinkle in a little salt and dilute the sesame paste with cold boiled water for later use.

25. Put the peeled cooked peanut kernels into a plastic bag and crush them with a rolling pin.

26. But don’t crush it too much, crush it well and set it aside (Note: the peanuts should be small peanuts from Sichuan Tianfu or small peanuts from Shandong. These two types of peanuts are more expensive, but taste crispier).

27. Preparation of cold noodles: Pour appropriate amount of sesame sauce and garlic juice into the steamed and cooled noodles, then add a little bit of pepper and sesame sauce, and then add appropriate amount of chili oil. Add a little pepper oil and then scoop in a tablespoon of secret sauce.

28. Sprinkle with appropriate amount of chopped peanuts.

29. Finally, add half a tablespoon of Sichuan preserved vegetables and mix well.
