What noodles can be made with hot noodles

In our country, many people like to eat pasta very much. There are many kinds of pasta. Some pasta can be made into snacks directly by crushing it. Some pasta needs to be blanched, that is, the noodles need to be loosened with hot water. The noodles blanched with hot water are softer when mixed and eaten, and are especially suitable for making pancakes. So what kinds of pasta can be made with blanched noodles?

Boiled noodles are made by kneading noodles with boiling water (about 65℃ to 100℃), stirring while adding water, and then kneading them into a dough after they cool down a little, and then making various foods. The principle is to use boiling water to soften the gluten and to cook and swell part of the starch, thereby reducing the hardness of the dough. Therefore, the higher the water temperature and the more boiling water, the softer the product will be, and it will taste less chewy and will have the disadvantages of sticking to teeth, hands, and work boards.

Material

Ingredients: 70 grams of butter, 85 grams of low-gluten flour, 70 grams of milk, 8 grams of rum, 60 grams of whole eggs, 100 grams of egg yolks, 210 grams of egg whites, a few drops of white vinegar, and 90 grams of fine sugar. Garnish with an egg yolk. (About 8 eggs in total)

1. Bring butter to a boil over low heat.

2. Turn off the heat, add low-gluten flour and mix well.

3. Add hot milk and mix well.

4. Beat the egg and egg yolk, add them into the batter in batches and mix well.

5. Add rum. (Wine must be added to remove the egg smell)

6. Stir into a smooth, particle-free egg yolk batter and set aside. Preheat oven to 180 degrees.

7. Add white vinegar to egg whites and sugar in three batches. Beat until small upright points appear when the egg whisk is lifted.

8. Take one third of egg white each time and add it to the egg yolk paste and mix well.

9. Finally, cut and mix into a uniform and shiny cake batter, pour into the baking pan and shake lightly.

The next step is to decorate with the Thousand Leaf pattern. The beautiful pattern sounds complicated, but it is actually quite simple to make.

1. Cut a 3-4mm hole in the piping bag filled with egg yolks, and squeeze parallel lines at 45 degrees from left to right.

2. Use a chopstick to draw a line from the upper left to the lower right, perpendicular to the parallel line.

3. Draw a line from the lower right to the upper left on both sides of this line, about 2.5-3CM away.

4. Continue to draw on both sides in turn. The two adjacent lines are in opposite directions. When all the lines are drawn, the thousand-leaf pattern is done.

Put it in a preheated oven at 180 degrees, middle layer, and bake for about 25 minutes. When the color is ideal, you can cool it down by 10 degrees.
