How to make shepherd's purse buns

1. Chop the meat into stuffing, stir well, add appropriate amount of soy sauce and cooking wine to marinate.

2. Chop the shepherd's purse into small pieces, add it into the minced meat, mix it with two spoons of oil, add appropriate amount of salt and mix well (no onion or ginger is added to keep the original flavor of the shepherd's purse).

3. Flour, 2 cups of white flour, 1 cup of cornmeal, half a bowl of warm water, add a spoonful of sugar and a spoonful of yeast, melt, slowly add water in small amounts, stir into snowflakes (basically no flour, to achieve the three light principles), and knead into dough.

4. Cover the basin with plastic wrap and ferment at room temperature overnight.

5. Knead the dough, divide it into small portions, and wrap it into buns.

6. Put the buns in the steamer and let them ferment for more than 30 minutes (only 12 minutes), then steam them for 15 minutes. The time depends on the size of the buns. After turning off the heat, wait 4 to 5 minutes before opening the pot and taking it out.
