How to make soybean flour bread?

1. Take half of the high-gluten flour (115g) and put it into a bowl with yeast and sugar. Set yeast and sugar aside. Pour warm water over the dry yeast and dissolve it fully. When the dry yeast is completely dissolved, add the egg liquid and mix thoroughly. Blend until there is no powder. Add the remaining half of the high-gluten flour (115g), soybean powder, black sesame powder and salt. Mix well and knead into a dough when there are no crumbs left. When the gluten is expanded to 80%, roll it into a ball, cover it with plastic wrap and let it ferment (about 25 minutes at 40°C), and check with your fingers whether the fermentation is successful. After the dough is deflated, divide it into 6 portions, roll into balls, cover with plastic wrap or a damp cloth, and let it rest for 10 minutes. Prepare the surface with powder while it sits. Mix soybean powder, black sesame powder, white sugar and glutinous rice flour evenly and set aside. Take a dough and flatten it. Roll into an oval shape of approximately 13x10cm. Fold both sides towards the center and pinch to close. Place, seam-side down, on a baking sheet lined with baking paper. Sprinkle the mixed powder on the dough and cover with plastic wrap or damp cloth for secondary fermentation (about 20 minutes at 40°C). Put it in the oven preheated to 180 degrees Celsius, bake it in the lower middle layer for 9 minutes, until it is slightly colored.

2. Nutritional content Although soybeans contain a lot of dietary fiber, the dietary fiber is greatly damaged during the process of making soybean powder due to heating and grinding. Soy flour is easier to digest than soybeans, so the protein in soybeans can be better absorbed. But be aware that at this time, the protein allergens in soybeans are also easily absorbed. Soybean flour also contains minerals such as calcium, magnesium, potassium, phosphorus, and iron. Because soybean powder is easy to eat, some professional athletes have also often drunk milk added with soybean powder in recent years.

3. Efficacy Soybean fat is rich in unsaturated fatty acids and soybean lecithin, which can maintain blood vessel elasticity, strengthen the brain and prevent the formation of fatty liver; soybeans are rich in saponins, protease inhibitors, isoflavones, molybdenum, selenium and other anti-cancer ingredients, which have an inhibitory effect on almost all cancers such as prostate cancer, skin cancer, colon cancer, esophageal cancer, etc.
