How to make fresh meat buns

1. Dissolve the yeast in 220 grams of warm water, stir well and let it stand for a while. (The warm water should not exceed 40 degrees. Try it with your hand. It should be slightly colder than your hand.)

2. Pour the water with dissolved yeast into the flour, and then stir it into flakes with chopsticks.

3. Sprinkle some flour on the chopping board, put the batter on it and knead for about 15-20 minutes until the dough becomes smooth. Then put the dough into a bowl and cover it with a wet cloth to ferment.

4. While the dough is fermenting, make the filling for the buns. Put the minced meat into a large bowl, then chop the green onion into small pieces and put it into the minced meat. Then add cooking wine, light soy sauce, salad oil, salt and a small amount of water in turn. Then stir the minced meat in circles with chopsticks until it can no longer be stirred and the minced meat is coated with starch.

5. At a temperature of 25 degrees, after about an hour, when the dough has fermented to twice its original size, continue to knead it on the chopping board to let the air inside out and then simmer for another 15 minutes.

6. Then knead the dough again and roll it into long strips, cut out the dough and roll it into round skins with a rolling pin.

7.Put the meat in the dough and fold it in a circle.

8. After wrapping them into buns, you can put them one by one on the plate. (It is best to put it on a steaming rack. I don’t have a steaming rack at home in Germany, so I can only put it on a plate and steam it)

9. Put cold water in the pot, then put the plate with the buns into the pot. Bring to a boil over high heat, then steam over medium heat for 15-20 minutes, and the fragrant meat buns are ready.
