How to cook spicy crayfish

1. Put the crayfish in clean water for 2-3 hours to remove dirt, then rinse and set aside

2. Add oil to a pan, stir-fry garlic, ginger, star anise, cinnamon and green peppercorns over medium-low heat until fragrant, then add the spicy sauce and stir-fry until the oil turns red.

3. Add the crayfish and stir-fry over high heat until it changes color

4. Add dark soy sauce, light soy sauce, fine sugar and balsamic vinegar, and pour in boiling water after the color and flavor are sufficient.

5. Bring to a boil over high heat and simmer over medium heat for about 15 minutes

6. Add salt to taste, turn to high heat and thicken the soup.

Cooking tips 1. It is best to cut off the head and gills of crayfish and wash them thoroughly.

2. When frying spices, the fire should not be too high, otherwise the spices will easily become burnt. It is best to fry them over medium or low heat until they are fragrant but not burnt.

3. Stir-fry the spicy sauce until the oil turns red, then add the lobster and stir-fry over high heat. Add seasonings and pour in boiling water when the color is enough. The cooked lobster will not have a smell only on the surface.

4. Finally, add salt to season. Make the soup as thick as you like. If you like to mix it with rice, you can leave more.

All kinds of shrimps are high in protein and low in fat, with the protein content accounting for about 16%-20% of the total and the fat content less than 0.2%.
