2. Knead the dough with sugar vigorously for a few minutes, roll it out thinly with a rolling pin, and then fold it like a fan with the help of the rolling pin. Cut it into noodles of appropriate width according to personal preference and shake it for later use.

3. Soak the fungus in warm water, pick the roots, wash and cut into small pieces. Cut the ham into small slices, and slice the onion, scallion and ginger separately.

4. Steam the rolled noodles in a steamer over high heat for 5 minutes. At the same time, pour oil into the wok. The amount of oil is 1.5 to 2 times that of normal cooking. Add peppercorns and star anise and stir-fry over low heat until fragrant.

5. Add scallions and ginger and sauté until fragrant.

6. Add black fungus and bean sprouts and stir-fry for half a minute.

7. Add onion and ham slices and stir-fry.

8. Add two and a half spoons of thirteen spices and stir well.

9. Add one tablespoon of dark soy sauce and stir well.

10. Add water until all the vegetables are covered.

11. Let the steamed noodles cool down for a while and shake them loose.

12. Spread the shaken noodles on the vegetables that have been added with water, cover the pot, and simmer on low heat for about five minutes.

13. When the sizzling sound in the pot becomes noticeably smaller, stir the noodles and vegetables evenly.

14. Add appropriate amount of salt for seasoning, stir well and turn off the heat before serving.
