Black sesame glutinous rice balls filling without lard

Glutinous rice balls are a traditional Chinese food, especially eaten during important festivals to symbolize the good meaning of family reunion. As people's demand becomes more and more vigorous, there are many types of glutinous rice balls, which is mainly reflected in the different fillings of glutinous rice balls, but the most common filling for glutinous rice balls is black sesame glutinous rice balls. When making black sesame glutinous rice balls, some oil needs to be added, so how to make black sesame glutinous rice balls without lard?

It is not recommended to use lard, but you can use light-flavored vegetable oil. Freeze the filling into blocks before use.

Three ways to make Yuanxiao:

Pearl dumplings

Ingredients: 1100 grams of premium glutinous rice, 50 grams of black sesame seeds, 100 grams of refined white flour, 100 grams of lard, 25 grams of rock sugar, 500 grams of white sugar, and tangerine peel (candied tangerine). Here’s how to do it:

1. Wash 1000 grams of glutinous rice and soak it in clean water for two days (change the water every 8 hours in spring and autumn, and every 4 hours in midsummer to prevent the glutinous rice from becoming sour). Grind the glutinous rice into fine powder and put it into a cloth bag to drain the water.

2. Take the remaining glutinous rice, wash it and soak it in warm water until soft.

3. Roast the black sesame seeds over low heat until they become fine powder, then mix with the refined white flour that has been roasted until golden brown. Remove the skin from the lard and cut into small dices, cut the tangerine peel into granules, and crush the rock sugar. Mix all the above ingredients with sugar to make the filling, and divide it into 20 round fillings.

4. Knead the glutinous rice flour paste to moisten it (if the paste is too dry, add appropriate amount of water), and divide it into 20 equal parts. Use each portion of dough to wrap a filling, shape it into a hemispherical shape that is round on top and flat on the bottom, and evenly spread the softened glutinous rice on the surface.

5. Steam the dumplings in a steamer over high heat until cooked. They can be eaten hot or cold.

Pick out the black sesame seeds and remove impurities.

Fry black sesame seeds in a pan over low heat. When frying, keep stirring with a spatula to prevent the black sesame seeds from getting burnt.

Put the roasted black sesame seeds in a container and let them cool naturally

Crush the cooled black sesame seeds in a food processor. Be sure to mix evenly, and try to avoid leaving any uncrushed black sesame seeds.

Add white sugar and peanut oil to black sesame seeds.

Mix oil, sugar and black sesame seeds until well combined.

Precautions

When frying black sesame seeds, be sure to fry them slowly over low heat.
