How to make homemade quick-frozen scallion pancakes

1. Pour boiling water into the flour;

2. Stir evenly with chopsticks first;

3. Slowly add a little cold water and knead the dough;

6. Three lights: hand light, face light, and basin light. After kneading the dough, let it rest for 30 minutes;

7. Sprinkle some flour on the chopping board to prevent sticking;

8. Roll the dough into a rectangle;

9. Use a rolling pin to roll the four rounded corners into a triangle and roll them from the inside out to make them right angles;

10. Brush with cooking oil, leaving a border around the edges, do not brush the edges;

11. Sprinkle with black pepper, salt, black sesame powder and chopped green onion

12. Fold the dough and pinch the last fold tightly;

13. Hold the dough with your hands and make it longer by squeezing it continuously;

14. Roll up the dough, with the end at the bottom;

15. Prepare a fresh-keeping bag and brush it with cooking oil;

16. Brush the rolled dough with cooking oil;

17. Put the rolled noodles into a fresh-keeping bag;

18. Use a knife or toothpick to cut the other two sealed corners of the plastic bag so that there is no air inside;

19. Press the rolling pin a few times and then roll it out;

20. Cut the rolled out dough into several pieces;

21. Cut off the plastic wrap at both ends of the seal;

22. Do not remove the plastic wrap and put the dough directly into the refrigerator or freezer;

23. Add some oil to the pan, remove the plastic wrap on one side and put it into the pan;

24. Gently tear off the plastic wrap on the other side without touching the dough, which is very convenient.

25. Fry until both sides are golden brown.
