How to make Tiramisu Souvlaki (@小智慧手步教滴)

1. Bring the mascarpone to room temperature in advance to soften it so that it is not too cold and is close to room temperature to prevent lumps from forming when stirring. If you don't have enough time, put it in a large bowl and stir it with your hands to soften it and raise the temperature.)

2. Because eggs are eaten raw, you must use fresh eggs. Wash them with water before cracking them, wipe them clean with kitchen paper, and separate the egg white from the yolk.

3. Add 50 grams of fine sugar to the egg whites and beat until it is almost hard foam. Lift the whisk from the bottom of the bowl with a slight bend on the tip. Do not beat it until it is completely hard, otherwise it will taste rough. Don't just beat it until it's wet and foamy, otherwise it will come out watery and be too soft.

4. Add 40 grams of egg yolks and sugar to warm water and stir continuously until the egg batter becomes thick and slightly white. The water should not be boiled to prevent the egg yolk from being cooked.

5. Put the gelatin sheets soaked in ice water in a small bowl, melt them over simmering water, and slowly pour them into the egg yolk paste. Before pouring the gelatin, stir the egg yolk paste again to prevent precipitation when left standing.

6. Pour the egg yolk paste into the mascarpone and mix well. Take 1/3 of the egg white and mix well, then pour in the remaining egg white. Mix well and set aside.

7. Dissolve a pack of instant coffee in warm water and pour in 3 bottle caps of coffee liquor. Mix well and set aside.

8. First pour some cheese paste on the bottom of the bowl, then brush the finger biscuits with coffee liquid, place them on the cheese paste, pour another layer of cheese paste, then put the finger biscuits on top, then fill the bowl with cheese paste and refrigerate.

9. Before eating, sift cocoa powder and decorate.
