1. Ordinary Spring Rolls

[Main ingredients] 12 spring roll wrappers, 200 grams of spiced dried tofu, 150 grams of pork, 100 grams of cabbage, 80 grams of carrots, appropriate amount of starch, seasoning, 500 grams of cooking oil, 1/2 tablespoon of soy sauce, 2 teaspoons of fine salt.

【Production process】

1. Wash the spiced tofu, separate the cabbage leaves and wash them, wash and peel the carrots, and cut them into shreds for later use.

2. Wash and cut the pork into strips, put it in a bowl, add soy sauce and starch, mix well and marinate for 10 minutes.

3. Pour appropriate amount of oil into the pan and heat it up, add the shredded pork and stir-fry until cooked, then serve.

4. Use the remaining oil to fry the rest of the fillings, then add the shredded pork and salt and stir well. Finally, pour in water starch to thicken the sauce to make the spring roll filling.

5. Flatten the spring roll wrapper, wrap appropriate amount of fillings and roll them up. Fry in hot oil until golden brown, then remove from oil and drain.

[Tips]: You can use egg white to seal the wrapped spring rolls.

2. Minnan Spring Rolls

[Source]: According to legend, in order to thank Zheng Chenggong, every family in Fujian prepared a dish to entertain him. In order to live up to the people's kindness, Zheng Chenggong stuffed dishes from each family into a piece of baked dough and rolled it up to eat. This is how spring rolls came into being. During the period around Qingming Festival, many Minnan people will make this kind of spring rolls at home, because oysters are one of the ingredients of this kind of spring rolls, and oysters are the most plump and not fishy during this period around Qingming Festival.

[Main ingredients]: peas, lean pork, oysters, carrots, sweet potato starch, peanuts, sugar, tofu skin, squid, green onions, eggs, shredded seaweed, oil, salt, dough (bought ready-made on the street)

【Material processing】:

1. Cut carrots and peas into shreds and stir-fry with salt.

2. Use oysters, sweet potato starch, eggs, onions, salt, etc. to make oyster omelette, and then mash it into pieces about 1/4 the size of the palm of your hand.

3. Cut the squid into rings and fry with salt. Add salt and fry the tofu skin. Cut the lean and fatty pork into strips and fry until cooked. Stir-fry the fried pork, tofu skin, squid, fried oysters, and shredded carrots thoroughly. (Don’t mix the pea shreds together. Peas will become soft after being stir-fried many times and lose their crisp taste.)

4. After frying the peanuts until fragrant, put them into a blender and blend them into peanut powder, then add white sugar.
