12. Continue beating for a while. When you lift the beater, the egg whites stand upright but the tip droops slightly, indicating that they have reached the stage of dry foaming. (It is easiest to mix cotton protein when it is beaten to this state. It is very smooth and will not shrink. If it is beaten too dry, it will appear in lumps and it will be a bit difficult to mix.)

13. Pour 1/3 of the whipped egg whites into the egg yolk batter, and stir evenly from the bottom up with a spatula (like Chinese stir-fry). Be careful not to stir in a circle, otherwise it will easily cause the whipped egg whites to defoam.

14. Pour the mixed batter back into the egg white bowl

15. Use the same method to stir evenly until the egg whites and egg yolk paste are fully mixed to form cake batter

16. Place the cut baking paper in the glass baking bowl, pour the batter in, and shake it gently to remove the big bubbles.

17. Place the baking bowl into the baking tray and fill the baking tray with cold water.

18. Put the baking tray in the lower layer of the oven, put the baking rack in the upper layer and cover it with tin foil, preheat the oven to 150 degrees for 10 minutes, then turn to 140 degrees for 40 minutes

19. When baking for the last 20 minutes, remove the tin foil to allow the cake to color.

20. After baking, poke the cake with a toothpick. If there is no residue on the toothpick after taking it out, it means the cake is cooked.

21. Take the cake out of the baking bowl and turn it upside down on the baking net. Remember this step, otherwise the cake will be wrinkled.
