How to make crispy meat floss rolls

1. Put the dough materials into the bread machine in the order of liquid first and solid later, and knead until the dough can be pulled out into a transparent film (finished stage)

2.1 Deflate the fermented dough and roll it into a ball, cover it with plastic wrap and let it rest for 10 minutes

3.2 Fermented dough (If you don’t have time during the day, you can only use refrigerated fermentation for two days. This is the dough after being refrigerated in the refrigerator for 24 hours. After taking it out, you will feel that it is over-fermented, but don’t worry, it will not affect the bread you make)

4.1 While the bread is fermenting, make the shortcrust pastry batter: soften the unsalted butter at room temperature, add the powdered sugar and mix well with a rubber spatula, then beat until fluffy.

5.2 Spread the relaxed dough on a silicone mat, roll it into the size of a baking tray, and put it into the oven for final fermentation

6.1 Use a fork to poke some small holes on the surface of the fermented bread dough and brush a layer of egg liquid on it.

7.2 Add low flour and mix into a batter, put it into a piping bag and set aside

8. Squeeze the pastry batter onto the dough surface

9. Bake in the middle layer of the oven at 170 degrees for about 20 minutes

10. Cover the baked bread with baking paper, turn it over, apply a layer of salad dressing, spread meat floss on the surface, and sprinkle a little black sesame seeds

11. Slowly roll up the bread from one end, try to roll it tight, wrap the rolled bread with wax paper and put it in a plastic bag to set (the bread will crack easily when rolling, which is a common problem. If you find that it cracks when you just roll it, don't stop, just continue to roll it in)

12. Wrap the rolled bread tightly with wax paper and let it set for 30 minutes. Cut into sections after cooling down, spread with salad sauce and meat floss
