6. Tear off the fat tendons from the chopped rabbit meat, wash it, and blanch it in boiling water until the meat turns white. Remove it from the meat and rinse it with clean water to remove the floating foam, and set aside.

7. Pour sunflower seed oil into a wok, add sugar, and stir-fry over low heat until sugar is dissolved and the oil turns slightly red.

8. Add Pixian fermented bean paste and chopped pickled pepper.

9. Stir-fry over low heat until the oil turns red and fragrant.

10. Add rabbit meat and stir-fry evenly.

11. Add minced ginger and garlic, and stir-fry over medium heat for a while.

12. When the pork skin shrinks, add cooking wine and stir-fry evenly.

13. Add appropriate amount of fresh soup (if not available, water can be used instead), and add a little salt and appropriate amount of braised soy sauce to season.

14. Add chicken essence.

15. Add chopped green onion and simmer over low heat until the rabbit meat is 90% cooked.

16. Remove the scallion segments, add the taro and tofu, and simmer together with the rabbit meat until cooked.

17. Add the pickled red pepper segments and MSG and mix well before removing from the heat.
